Steamed Butternut Squash Puree

This puree is perfect for soups, stews, baking, and smoothies!

Steamed Butternut Squash Puree

Ingredients

  • 3.25 lbs. / 1500g butternut squash

Directions

  • Set up your steamer on the stove with 3 cups / 750ml of water. Bring water to a simmer.
  • Cut the squash lengthwise down the centre. Scoop out the seeds. Peel if desired (the skin is edible, but sometimes tough even after cooking, so it’s up to you!). Roughly chop into 1” / 2.5 cm chunks (you should end up with about 7 cups / 1kg / 2 1/4 lbs.) and place them in the steamer basket.
  • Cook for 10-15 minutes until tender. Remove from heat, let cool slightly, then puree in a food processor or blender until completely smooth. Reserve the steaming liquid for soup, if desired (it’s full of minerals!).
  • You should end up with about 4 cups / 1 liter of puree. Store in an airtight glass container in the fridge until you’re ready to use it.

Notes

This amount of puree makes enough for one batch of Come Together Soup with one batch of Butternut Cornbread, or four batches of cornbread. It also delicious stirred into steamed brown rice, or slathered on toast!
