Roasted Sweet Potatoes

Simple, satisfying, and super easy!

Roasted Sweet Potatoes

Ingredients

  • 5-6 sweet potatoes about 300g / 11oz each / 3.75lb. 1700g

Directions

  • Preheat oven to 400℉ / 200℃
  • Scrub the sweet potatoes thoroughly, then poke in a few places with a fork (this will help steam escape). Place on a baking tray (lined with parchment, if desired) and roast for 40-45 mins until tender. Remove from oven, let cool and enjoy, or store in the fridge for up to five days.

Notes

1 for the dip, 1 for the cacao spread, 3 to stuff with other components from the Autumn Rollover Menu
