Massaged Cabbage

Massaged Cabbage

Ingredients

  • ½ head of medium red cabbage approx. 1 lb. / 525g
  • Juice of one lime
  • ½ tsp. fine sea salt or more to taste

Directions

  • Shred the cabbage into thin strips, or use a mandoline slicer. Add it to a large bowl with the lime juice and salt. Massage lightly for about a minute until the cabbage is bright purple and juicy.
  • Store in an airtight container in the fridge for up to five days.
