This spread is an ode to the first mess of peas, welcoming in the summer season! You can use fresh or frozen peas depending on what is available to you, or even switch them out with cooked chickpeas, navy beans, or lentils. The miso here imparts a rich umami flavour, perfectly complimenting with the sweetness of the peas. I love adding just a tablespoon of the hemp seed parmesan to bring even more depth to this rich-tasting yet light spread.Β
Miso Pea Spread
Ingredients
- 1 lb. / 500g green peas fresh or frozen
- 3 Tbsp. tahini
- 4 Tbsp. white or yellow miso
- 2 spring onion whites and green tops
- 2 Tbsp. freshly squeezed lemon juice
- ΒΌ tsp. fine sea salt
- 1 Tbsp. hemp seed parmesan if desired
Directions
- Bring a large pot of water to the boil. Add the peas and cook just until tender and bright green (1-3 minutes, from fresh or frozen). Drain and place in a food processor.
- Add the remaining ingredients, blend on high and taste to adjust seasoning if necessary. Say thank you and enjoy. Store leftovers in an airtight container in the fridge for up to one week.
