Everything Bagel Spice Coconut Clusters

If you like Coconut Bacon you’re going to love these clusters! They’re super crunchy, savoury, and satisfying, with extra seeds and everything bagel seasoning for a blast of umami goodness. Bake them in muffin forms for cluster shapes to grab and go, or bake them flat out for a chunky, chip-like vibe. I actually preferred them this way, but you win either way!

Find the thickest coconut flakes you can for this recipe – I love the ones with a tad of brown husk still attached – to deliver that crave-able crunch! 

Everything Bagel Coconut Clusters

Ingredients

  • ¼ cup / 60ml tamari liquid aminos, or soy sauce
  • 3 Tbsp. / 60ml pure maple syrup
  • 3 Tbsp. melted coconut oil preferably flavour-neutral
  • ¼ cup / 35g everything bagel seasoning
  • ¼ cup / 42g chia seeds
  • ½ cup / 38g pumpkin seeds
  • 1 tsp. garlic powder
  • 5 cups / 425g large coconut flakes preferably with husk

Directions

  • Whisk all wet ingredients together in a large bowl. Add the seasoning, chia and pumpkin seeds, and garlic powder. Stir well to combine, then add the coconut flakes and toss well to coat. Let the coconut sit and marinate in the liquid for about 5 minutes, while you preheat the oven: 325°F / 160°C.
  • Place coconut in either lined muffin forms, or a parchment-lined baking sheet, evenly spread out. Bake for 20-30 minutes, and if baking on a sheet, stir every 7 minutes or so, until fragrant and crispy. The coconut will crisp up outside the oven as well. Store in a very airtight container for up to three weeks. Say thank you and enjoy with everything and on everything!
