Inspired to add more fiber to my green juice, this recipe combines both a juice and a smoothie in one! There are appliances out there that both blend and juice which are super cool but not necessary to make this recipe. Adding fiber and some whole foods to green juice is the best of both worlds as you get the intense blast of nutrients but also the slow-moving / body-loving fiber-rich foods as well!
Bright Green Blended Juice
- ½ cucumber
- 1 apple
- 25 g chunk ginger
- ½ lemon
- 3 large celery stalks
- ½ cup / 85g cooked and cooled green lentils
- 1 frozen banana
- 2 cups / 60g packed baby spinach
- Make the juice in your preferred juicer (in the order listed above) or sub with approx. 1½ cups / 375ml a store-bought green juice with similar ingredients.
- Add the juice to a blender, add the cooked lentils, banana, and spinach. Blend on high until smooth. Taste and adjust seasoning as necessary. Enjoy immediately!
