Sweet Potato Pie Smoothie

This smoothie is so delicious is could be dessert! Roasted sweet potato provides a silkiness and body to the smoothie, not to mention filling fibre and nutrients galore. With the avocado and tahini for nourishing healthy fats, apple and dates for extra sweetness, and spices for all around flavour, this smoothie was a hit with my whole family!

Sweet Potato Pie Smoothie

Ingredients

  • 1 small roasted sweet potato see Dessert Roasted Sweet Potato for full instructions, frozen in chunks
  • ½ avocado
  • 1 apple
  • 1 Tbsp. tahini
  • small chunk fresh ginger
  • 1 Tbsp. freshly squeezed lemon juice
  • ¼ tsp. ground cinnamon
  • ¼ tsp. vanilla extract
  • 2 dates pitted
  • pinch sea salt
  • 2 cups water as needed

Directions

  • Place all ingredients in a blender, blend on high until smooth, adding water until desired consistency is reached.
  • Taste and adjust flavours as desired. Say thank you and enjoy.
