A grain-free alternative to a warm bowl of oats. Whether you tolerate grains, enjoy them sometimes, they make up a great percentage of your diet, or something in between… this unique breakfast can be something new and nourishing in your week! You know how much I love lentils and even for me, this porridge is surprising and fun!
Red Lentil Strawberry Porridge
Ingredients
- 1 cup / 200g red lentils
- 1 cup / 250ml water
- 1 cup / 250 ml coconut milk
- 1 cinnamon stick
- 3 cardamom pods crushed
- 15 g / ½ oz fresh ginger sliced
- pinch salt to taste
- maple syrup to serve if desired
Directions
- Place the lentils in a small pot or bowl and soak overnight, or for 8-12 hours.
- Drain and rinse the lentils well. Place back in the pot, add the water and coconut milk, cinnamon, cardamom and ginger. Bring to a boil, reduce to simmer, and cook on very low heat until the lentils are tender, about 15-20 minutes. Stir occasionally to prevent sticking, and add more water if the pot becomes dry – you’re looking for a loose porridge consistency. Taste and adjust seasoning to suit your tastes.
- While the lentils are cooking, slices the strawberries and toss in a little maple syrup, if desired.
- Serve the lentil porridge in a bowl with the strawberries on top. Add a touch more maple syrup if you’d like, and top with Activated Nuts and Seeds, if desired. Say thank you and enjoy.
