Golden Milk Bircher with Persimmon Ginger Compote

This warm, soothing spin on a traditional bircher brings warmth, light, and richness to cool mornings. Ginger-perfumed persimmons on top add sweetness, and coconut for crunch make this a breakfast to remember. Golden Milk Bircher with Persimmon Ginger Compote

Ingredients

Golden Milk Bircher

  • ½ cup / 50g hemp seeds
  • 2 Tbsp. unsweetened flaked desiccated coconut divided
  • ½ Tbsp. golden milk mix
  • ½ Tbsp. maple syrup optional
  • ½ Tbsp. freshly squeezed lemon juice
  • 1 ½ cups / 375ml water
  • pinch salt
  • 1 cup / 100g rolled oats
  • 2 Tbsp. chia seeds

Persimmon Ginger Compote

  • 8 fuyu persimmon (about 1 ½ kg / 3 lbs.) peeled and cut into bite-sized pieces.
  • 6 Tbsp. filtered water
  • 1 Tbsp. pure maple syrup
  • ½ tsp. / 17g minced fresh ginger
  • ¼ tsp. flaky salt
  • ½ Tbsp. freshly squeezed lemon juice

Directions

  • To make the bircher, combine hemp seeds, 1 tablespoon coconut, golden milk powder, maple syrup, lemon juice, and water in a blender. Blend on high until smooth.
  • In a bowl or jar, combine the oats, chia seeds and remaining coconut. Pour the wet mixture over and mix well. Set aside to soak for at least 4 hours, up to 24. Enjoy warm or cold, with fresh or stewed fruit, nuts, seeds, and or a sweetener of your choice.
  • To make the compote, combine all of the ingredients, except for the lemon juice, in a small saucepan, and bring to a simmer. Cook on low-medium until the persimmons have softened, and the liquid has reduced to a syrup. This should take about 20-25 minutes. 
  • Remove from heat and stir in the lemon juice. Taste and adjust seasoning as desired. 
  • Enjoy immediately, or store cooled compote in an airtight glass container in the fridge for up to five days. Reheat as desired, or enjoy cold – it’s great over vanilla or coconut ice cream!
