Cherry Breakfast Sorbet! Yes, that’s right, sorbet for breakfast…I even snuck some cauliflower in there but you’d never even notice.
Cherry Breakfast Sorbet makes a stellar morning meal or an afternoon pick-me-up. It’s so fresh, juicy and summer-y – a true celebration of this season! Cherries are a good source of fibre, vitamins, minerals, and are well known for their antioxidant properties. They are powerful, anti-inflammatory fruits, also helpful in lowering hypertension, and boosting melatonin production for a good nights sleep.
14 cherries is considered a serving, so grab a couple handfuls and you’re good to go for the day!
Cherry Breakfast Sorbet
Ingredients
- 1 cup / 250ml full fat coconut milk
- 1 frozen banana
- 2 cups / 300g frozen pitted cherries or fresh!
- 1 cup / 100g frozen cauliflower florets
- 1 tsp. vanilla extract
- 1 ½ Tbsp. freshly squeezed lime juice
For garnish if desired:
- chocolate granola
- fresh cherries
- coconut milk
Directions
- In a blender combine the coconut milk, banana, cherries, cauliflower, vanilla, and lime juice. Blend on high until completely smooth and creamy.
- Immediately spoon into glasses or bowls, top with desired toppings (or leave it as is!)
- Enjoy and rejoice!
