Place the lentils in a small pot or bowl and soak overnight, or for 8-12 hours.
Drain and rinse the lentils well. Place back in the pot, add the water and coconut milk, cinnamon, cardamom and ginger. Bring to a boil, reduce to simmer, and cook on very low heat until the lentils are tender, about 15-20 minutes. Stir occasionally to prevent sticking, and add more water if the pot becomes dry - you’re looking for a loose porridge consistency. Taste and adjust seasoning to suit your tastes.
While the lentils are cooking, slices the strawberries and toss in a little maple syrup, if desired.
Serve the lentil porridge in a bowl with the strawberries on top. Add a touch more maple syrup if you’d like, and top with Activated Nuts and Seeds, if desired. Say thank you and enjoy.
